Jeweled Fruitcake
Ingredients
2 1/2 C. unsifted flour
1 tsp. baking soda
2 eggs
1 jar mincemeat; none such ready to use
14 ounces sweetened condensed milk
8 ounces green candied cherries halved, 1 C.
8 ounces red candied cherries halved, 1 C.
6 ounces apricots, dried, chopped
6 ounces candied pineapple; chopped
1 1/2 C. pecans; chopped
Cooking Instructions
Preheat oven to 300. Grease and flour 10-inch tube or fluted tube pan. Combine flour and baking soda. In large bowl, beat eggs, stir in remaining ingredients. Blend in dry ingredients. Pour batter into prepared pan. Bake 1 hour 30 minutes or until wooden pick comes out clean. Cool 10 minutes; remove from pan. Cool.
