Italian Carrots
Ingredients
2 small bunches carrots, peeled
2 cloves garlic, whole
1 tsp. salt
fresh Italian parsley, chopped
salt and pepper, to taste
Cooking Instructions
Place whole carrots, garlic, and 1 tsp. salt in a medium saucepan. Cover with water. Bring to a boil, cover, and simmer until the carrots are crisp yet tender, about 5 minutes. Drain and discard the garlic. Arrange on a platter. Sprinkle with chopped parsley. Salt and pepper to taste. Serve at once.
