Ingredients

1 C. frozen corn, thawed, drained
1 C. shredded jack/cheddar cheese
1 can (4-oz.) green chilies, chopped
3 eggs
shredded lettuce
1-1/2 C. cut-up cooked chicken
1 pack taco seasoning mix
1-1/4 C. milk
3/4 C. baking mix
sour cream

Cooking Instructions

Heat oven to 400. Grease a 10-inch pie plate. Mix chicken, corn and seasoning mix: spread in pie plate. Sprinkle with the chilies and cheese. Beat milk, eggs and baking mix until all lumps are out. Pour into greased pie plate. Bake for 25-30 minutes or until knife comes out clean. Cool a bit and serve with the sour cream and shredded lettuce.
