Ingredients

1 lb. ground beef
1 1/2 C. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
2 C. milk
1 1/3 C. Bisquick
4 eggs
2 sliced tomatoes
1 C. shredded Cheddar or process American cheese (4 oz.)

Cooking Instructions

Heat oven to 400º. Lightly grease a 10″ pie plate. Cook and stir ground beef and onion in a 10″ skillet until beef is brown; drain. Stir in salt and pepper. Spread in pie plate. Beat milk, Bisquick and eggs until smooth, 15 seconds in a blender on high or 1 minutes with a hand beater. Pour into pie plate. Bake for 35 minutes. Top with tomatoes; sprinkle with cheese. Bake until knife inserted in center comes out clean, 5-8 minutes longer. Cool for 5 minutes.
