Icelandic Christmas Cake
Ingredients
1 C. white sugar
3/4 C. butter or margarine
2 eggs
2 1/2 C. all-purpose flour
2 tsp. baking powder
3/4 C. milk
1/2 C. raisins
1/2 tsp. lemon flavoring
1/2 tsp. cardamom flavoring
Cooking Instructions
Preheat oven to 350. Grease one 11-inch loaf pan. Cream butter or margarine and sugar until light fluffy. Add eggs one at time beating well after each one. Stir in milk, lemon and cardamom flavorings. Stir in flour and baking powder. Sift a little flour over raisins then stir them into batter. Pour batter into prepared pan. Bake at 350 for 55-60 minutes.
