Hot German Chicken Salad
Ingredients
2 C. celery, chopped
1/2 C. almonds, toasted, slivered
2 oz. canned pimentos, drained
1 bell pepper, chopped
3 chicken breasts, cooked, diced
1/2 C. mayonnaise
1 tsp. German or other prepared mustard
1/4 C. scallion, chopped
1/2 tsp. salt
Cooking Instructions
Preheat the oven to 400 degrees F. Mix the celery, almonds, pimento, green pepper and chicken together. Transfer to an oiled 2-quart casserole dish. Combine mayonnaise, mustard, scallion, and salt in a mixing bowl; blend. Spread over top of chicken mixture. Bake, uncovered, for 20 to 25 minutes, until the topping is nicely browned.
