Honey-Spice Acorn Squash
Ingredients
1 medium acorn squash
1/4 C. butter or margarine, melted
1/4 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. ginger
1/3 C. honey
Cooking Instructions
Preheat oven to 375°. Scrub squash. Cut in half lengthwise and remove seeds and stringy fibers. Arrange, cut side down, in a shallow baking pan. Surround with 1/2″ hot water. Bake for 30 minutes. Combine the remaining ingredients. Pour off excess liquid from baking pan and turn squash cut side up. Pour the sauce into the cavities and bake for 15 minutes, basting now and then with the sauce. Serves 6.
