Herbed Crab Sandwiches
Ingredients
1 lb. lump crabmeat
2 Tbsp. low fat mayonnaise plus 2 tsp.
2 tsp. fresh parsley, minced
2 tsp. fresh tarragon, minced
1 Tbsp. scallions plus 1 tsp., minced
1/4 lb. low fat cream cheese
2 eggs, beaten
3/4 tsp. Dijon mustard
4 English muffins, split and toasted
4 slices tomato
Cooking Instructions
Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium bowl. In a separate bowl, beat together the cream cheese, eggs, and mustard. Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inches from the heat source for 3 minutes. Add the tomato slices and broil again for 2 more minutes.
