Herb And Lemon Rice
Ingredients
1/4 C. chicken broth, low fat, low sodium
1 clove garlic, minced
2 Tbsp. minced onion
1/4 C. minced carrot
1-1/2 C. short grain brown rice
3 C. chicken broth, low fat, low sodium
1 to 2 Tbsp. minced basil
2 tsp. minced parsley
1 Tbsp. lemon juice
1/4 tsp. lemon rind
Cooking Instructions
Heat the broth in a saucepan over medium-high heat. Add the garlic and onion; sauté for 3 minutes. Add the carrot; sauté for 3 minutes. Add the rice; sauté for 2 minutes. Add the broth, bring to a boil, and lower the heat. Cover, and simmer until the water is absorbed, about 40 to 45 minutes. Add the remaining ingredients, and serve.
