Heart Healthy Oat Muffins
Ingredients
2 C. oat bran
1/4 C. brown sugar; firmly packed
2 tsp. baking powder
1/2 tsp. salt or substitute (optional)
1 tsp. nutmeg heaping (optional)
1/2 C. skim or 1 percent milk
2 egg whites slightly beaten
1/4 C. honey
2 Tbsp. vegetable or canola oil
1/2 tsp. vanilla
1/2 C. raisins (optional)
1 mashed banana (optional)
1/2 C. blueberries or raspberries (optional)
1 chopped apple tossed with 1 tsp. cinnamon (optional)
Cooking Instructions
Heat oven to 425 degrees F. Coat muffin pan with cooking spray, or line with paper baking C.. Combine oat bran, brown sugar, baking powder, salt, nutmeg, or any recipe options. Add milk, egg whites, honey and oil. Stir in vanilla. Do not over mix. Bake 15 to 20 minutes, until lightly browned.
