Hawaiian Cookies
Ingredients
2 C. flour, sifted
2 tsp. baking powder
1/2 tsp. salt
2/3 C. butter or shortening
1-1/4 C. Sugar Twin
1/2 tsp. vanilla
1/2 tsp. almond flavoring
1 egg
3/4 C. pineapple, crushed, well drained
1/2 C. coconut, finely shredded or chopped
Cooking Instructions
Sift together flour, baking powder and salt. Cream shortening, sweetener, and flavoring thoroughly. Beat in egg until mixture is fluffy. Blend in pineapple and dry ingredients. Drop by teaspoonfuls on ungreased cookie sheet. Sprinkle with coconut. Bake at 325 degrees F. for about 20 minutes, until browned.
