Grilled Cornish Game Hens
Ingredients
2 Cornish hens, split in half
2 garlic cloves
1-1/4 small shallots
1-1/4 tsp. sugar
3/4 tsp. cinnamon
1 Tbsp. soy sauce plus 1 tsp.
1 Tbsp. dry sherry plus 1 tsp.
Cooking Instructions
Prepare hens by washing them inside and out and discarding giblets. With poultry shears, cut each hen in half. In a food processor, grind together garlic, shallots, sugar, and cinnamon until mixture is paste-like. Place in a bowl; stir in soy sauce and sherry. Rub marinade over hens and allow to marinate in the refrigerator at least 2 hours, or up to 48 hours. Prepare an outside grill with an oiled rack set 4 inches from heat source. On a gas grill, set heat to high. Grill hens 30 minutes, turning once, until juices run clear.
