Green Vegetable Ragout
Ingredients
3 Tbsp. butter
1 large onion sliced
1 seedless cucumber sliced
3/4 pound zucchini sliced
1 green pepper seeded, and cut in strips
1/2 C. apple cider
Salt to taste
Freshly ground black pepper to taste
Cooking Instructions
Melt butter in pan, add onion and cook until soft. Add remaining vegetables and cook for 5 minutes without browning. Stir in cider and season well. Turn into crock pot and cook on low for 5 to 7 hours. Check seasoning before serving with roast lamb or pork.
