Green Beans With Mint
Ingredients
2 lb. tiny green beans, washed, trimmed, left whole
boiling salted water
3 sprigs mint
1/2 C. olive oil
1/4 clove garlic
2 tsp. wine vinegar
salt and pepper to taste
Cooking Instructions
Cook the beans in boiling salted water to cover until crisp-tender, about 6 minutes. Drain beans and rinse with cold water briefly to stop cooking but not to cool beans down too much. Place the remaining ingredients in an electric blender and blend until smooth. Pour over hot rinsed beans. Serves 8.
