Glazed Carrots
Ingredients
3 or 4 med. carrots, cut into 1 inch pieces
1/4 C. water
1/4 C. brown sugar
2 Tbsp. orange juice
1 tsp. grated orange peel
1 1/2 Tbsp. butter or margarine
Cooking Instructions
1. Place carrots and water in 1 quart casserole. Cover with tight fitting lid or plastic wrap. Microwave on High (100%) for 6 to 8 minutes or until tender. Allow to stand 5 minutes, then drain. 2. Combine brown sugar, orange juice, orange peel and butter or margarine in a 1 cup measure. Microwave on High (100%) for 1 1/2 to 2 minutes or until hot and bubbly. Pour over carrots. Cover. 3. Microwave on High (100%) for 1 to 2 minutes or until heated through. Serves 2-3.
