German Potato Salad
Ingredients
6 C. sliced raw potatoes (30 oz.)
1 C. chopped onion
1 C. chopped celery
1 C. water
1/4 C. cider vinegar
1/4 C. Sugar Twin or Sprinkle Sweet
2 Tbsp. quick-cooking tapioca
1/4 tsp. freshly ground black pepper
2 tsp. dried parsley flakes
1/4 C. Hormel bacon bits
Cooking Instructions
In a crock pot, combine potatoes, onion, and celery. In a medium bowl, combine water, vinegar, Sugar Twin, tapioca, black pepper and parsley flakes. Pour mixture over potato mixture. Mix well to combine. Cover and cook on low for 8 hours. Stir in bacon bits. Serve warm.
