Fruited French Toast
Ingredients
1 each ripe banana
1/2 C.(s) orange juice
1 tsp. vanilla
1 pinch ground cinnamon
4 slice wholewheat bread
Cooking Instructions
Omitting the bread, blend the remaining ingredient in a food processor until smooth. Pour into a shallow pan or bowl. Preheat a non stick skillet or griddle over medium heat. Oil it lightly. Place bread in the bowl containing the fruit mixture and turn gently several times until it is well coated. Place in the skillet and drizzle with any leftover mixture. Cook until lightly cooked on both sides.
