Fruited Chicken
Ingredients
2-1/2 lb. chicken pieces, boneless
1/2 tsp. salt
1/4 tsp. pepper
3 Tbsp. vegetable oil
21-oz. can fruit pie filling
1/2 C. white wine, dry
1/2 C. lime juice
1/4 C. light brown sugar, packed
1/4 tsp. allspice
1/4 tsp. nutmeg
1/4 tsp. cloves, ground
Cooking Instructions
Rinse chicken and pat dry. Season with salt and pepper, then brown in a skillet in the oil for 10 minutes on each side, drain. Combine pie filling, wine, lime juice, brown sugar, and spices in a bowl and mix well. Arrange chicken in a microwave safe casserole, and spoon the fruit sauce over it. Cover and nuke on low setting for 20 minutes or until the chicken is no longer pink and is fork tender. Serve over hot cooked noodles or rice.
