Fruitcake
Ingredients
1/2 C. snipped dried figs
2 C. whole wheat flour
1/2 C. chopped dates
1/2 C. wheat germ, toasted
1/2 C. chopped prunes
1 Tbsp. baking powder
1 C. crushed pineapple
1 tsp. baking soda
1 C. dark raisins
1 tsp. ground cinnamon
2 C. chopped apple (1 medium)
1/2 tsp. ground nutmeg
1/2 C. chopped walnuts
2 eggs
1/2 C. orange juice
Cooking Instructions
Combine figs, dates, prunes, pineapple, raisins, apple, walnuts, and orange juice in a bowl. Add the remaining ingredients and mix well. Pour into a lightly oiled 10-inch tube pan. Bake at 350 degrees F. for 40 to 50 minutes.
