Fruit Filled Gingerbread Cake
Ingredients
1 1/4 C. flour
3/4 tsp. soda
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1/4 C. candied fruit; diced
2 Tbsp. candied ginger; sliced, or 1/2 tsp. ground ginger
1/4 C. sugar
1/4 C. shortening
1 egg
1/3 C. honey
2 Tbsp. molasses
1 C. hot water
1/4 C. nuts; finely chopped
1/3 C. sugar
1/4 C. orange juice
1/2 tsp. lemon extract
Cooking Instructions
Sift together flour, soda, spices and salt. Add diced candied fruit and candied ginger, if desired. Blend together shortening and sugar, creaming well. Add egg, honey and molasses; beat well. Blend in dry ingredients; mix thoroughly. Add hot water and mix until smooth. Pour into well-greased and lightly floured 8 x 8 x 2 inch pan. Sprinkle with nuts. Bake at 350 for 30-35 minutes. Pour orange glaze over cake. Return to oven; bake 10 more minutes. Combine sugar and orange juice in a saucepan. Boil 5 minutes. Remove from heat; add 1/2 tsp. lemon extract.
