Fritters
Ingredients
1/3 C. packaged biscuit mix
1/4 C. grated Parmesan cheese
1/8 tsp. pepper
2 slightly beaten eggs
2 C. shredded unpeeled zucchini (2 med.)
2 Tbsp. butter
Cooking Instructions
In bowl stir together biscuit mix, Parmesan cheese and pepper. Stir in beaten eggs just until mixture is moistened. Fold in zucchini. In large heavy skillet or griddle melt butter over medium-hot coals. Using 2 tablespoons mixture for each fritter, cook 4 at a time until browned, 4-5 minutes on each side. Keep warm while;e cooking remaining zucchini fritters. Makes 6 servings.
