Fresh Tomato Cake
Ingredients
1 C. dark brown sugar
1/2 C. shortening
2 eggs
3 C. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. nutmeg
1 tsp. salt
2 C. fresh ripe tomatoes; peeled,
1/2 C. chopped nuts
1/2 C. chopped dates
1/2 C. chopped raisins
Cooking Instructions
Cream sugar and shortening. Add eggs. Add sifted dry ingredients, mixing well Stir in tomatoes, nuts, dates, and raisins. Put into greased and floured 9 x inch baking pan. Bake in preheated 350 oven for 35 minutes or until cake tests done. Frost with cream cheese frosting. Cream Cheese Frosting: In a mixing bowl, beat 2 3- ounce packages cream cheese (softened), 5 Tbls. butter (softened at room temperature) and 3/4 tsp. vanilla with electric mixer till light and fluffy. Gradually add 2 2/3 C. sifted powdered sugar, beating well.
