Fresh Apple Butter Cake
Ingredients
1 C. butter
2 C. sugar
3 eggs
3 C. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/8 tsp. nutmeg
2 tsp. vanilla
3 C. Macintosh apples; diced
2 C. walnuts; chopped
Sherry glaze
1 1/2 C. sugar
1/2 C. sherry
Cooking Instructions
Cream the butter and sugar then add eggs, one at a time, beating well after each addition. Sift flour, soda, salt, cinnamon, and nutmeg together, gradually add to butter mixture. Stir in vanilla then fold in apples and walnuts. Pour into a greased 10-inch tube pan and bake in a preheated, 325 oven for approximately 1 1/2 hours. Cool then drizzle sherry glaze over cake and serve. Sherry Glaze: Combine sugar and sherry in a heavy saucepan; cook, stirring constantly, until syrupy, about 2 minutes.
