Fourth Of July Cake
Ingredients
1 package yellow or chocolate cake mix
2 pints fresh blueberries
3 pints fresh strawberries
3 C. whipping cream
1/2 C. confectioners sugar
Cooking Instructions
Bake cake according to direction. Pour into a 9×13-inch pan. Cool. Place on a serving plate or board. Whip the cream with confectioner’s sugar. Cut strawberries in half lengthwise. Spread cream evenly around sides of cake, saving a little for top. Decorate using a pastry bag, pipe (or dollop plus spread with a spatula) rows of cream alternating with rows of strawberries for flag stripes inch. Make a background of blueberries in upper left-hand corner, pipe or dollop stars on top to create star inch section of cake. If making cake ahead, arrange fruit several hours before serving. Add cream up to 1 hour before serving.
