Fool Achdar (Fava Beans)
Ingredients
2 lb fresh beans,shelled
1 c water
2 T corn oil
1/4 t salt
1/4 t white pepper
1/4 c fresh coriander,chopped
Cooking Instructions
1. In a pan, place beans, water, oil, salt, and pepper. Bring to
boil over moderate heat. Covered pan and cook for 20 minutes until
tender. Remove from heat and drain well.
2. Add coriander. Cover pan and let stand for 5 minutes. Mix well.
Serve warm with rice. Makes 6 servings with other dishes.
