Fish Batter 4
Ingredients
1 C. flour
2 egg yolks
1 C. beer
2 Tbsp. corn oil
Tabasco
2 lbs. of your choice of fish
1/2 C. chopped scallions (optional)
Cooking oil (about 2-3 inches)
Cooking Instructions
Preheat oil to 350 degrees. Add flour, 2 egg yolks, 1 cup beer and 2 tablespoons of corn oil; set aside. Whip 2 egg whites until medium stiff; fold into batter. Add dash of Tabasco and scallions. Dip fish in batter. Fry until golden, about 2 minutes per slide; drain and serve.
