Fast Miso Soup
Ingredients
1 C. vegetable stock
1/4 C. mushrooms, sliced
1/2 C. bok choy, shredded
1/4 C. brown rice, cooked
1 1/2 tsp. mellow white miso
2 tsp. water
Cooking Instructions
Combine the stock, mushrooms, bok choy and rice in a saucepan. Bring to a boil and simmer for 5 minutes. Remove from the heat. Combine the miso and water in a small bowl. Stir into the soup and serve immediately.
