Far East Salad
Ingredients
1 C. shredded lettuce
1/2 C. coarsely chopped fresh broccoli
1/2 C. fresh snow peas, if frozen, thaw
1/4 C. shredded carrot
1/4 C. canned water chestnuts, sliced
1/4 whole green bell pepper, or red, cut into strips
1/2 C. fresh bean sprouts
1 Tbsp. canola oil
1 tsp. lemon juice
Cooking Instructions
Arrange the shredded lettuce to cover a dinner plate. In layers, add broccoli, snow peas, carrots, water chestnuts, bell pepper, and bean sprouts. Whisk together the remaining ingredients, and pour the dressing over the salad.
