Family Favorite Cake Diabetic
Ingredients
3/4 C. diet margarine
1 1/2 C. non-nutritive sweetener
4 tsp. baking powder
1/2 tsp. salt
3 C. flour
1 C. skim milk
1 tsp. almond extract
3/4 C. egg whites (4-5)
Creamy Frosting:
1/2 C. non fat cottage cheese, sieved
1/8 tsp. salt
1/2 Tbsp. diet margarine, melted
1/2 C. Equal-Sugar Twin
1 tsp. vanilla
Cooking Instructions
Preheat oven to 375. Cream margarine and sweetener. Sift baking powder, salt, flour and then add alternately with skim milk to creamed mixture. Add almond extract, and beat egg whites until stiff peaks form, and fold in. Pour into 2 well-greased 9 inch layer pans. Bake about 30 minutes. Cool a few minutes, then remove from pans and cool further on wire racks. Top with Creamy Frosting. Creamy Frosting: Mix all ingredients. Beat until smooth. Spread on Cake. Frosts one cake. raisins. Add flour mixture to creamed mixture alternately with orange juice, beginning and ending with flour mixture. Beat at low speed of an electric mixer after each addition. Spoon batter into an 8-inch square baking pan coated with cooking spray. Bake at 350 degrees for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cut into squares to serve.
