Fabulous Fish Chowder
Ingredients
4 slices bacon
3/4 C. onion, chopped
4 lg. potatoes, peeled & thinly sliced
1 lb. frozen fish (of your choice)
1 qt. milk
1 tsp. salt
1/2 tsp. pepper
1/8 tsp. thyme
1/4 C. fresh parsley, chopped
Cooking Instructions
Cook bacon until crisp and crumbly, saute onion until tender, but do not brown. Mix bacon and onion together in large Dutch oven or soup kettle. Add potatoes, and fish which has been cut into 1 inch cubes. Add milk, salt, pepper, thyme and parsley. Bring to a boil and simmer over low heat about 5 minutes, until fish flakes when pierced with a fork. 4 generous servings.
