Ever So Easy Fruitcake
Ingredients
2 1/2 C. unsifted flour
1 tsp. baking soda
2 eggs; slightly beaten
28 ounce jar ready-to-use mincemeat
14 ounce can sweetened condensed milk not evaporated milk
2 C. mixed candied fruit (1 pound)
1 C. nuts; coarsely chopped
Cooking Instructions
Preheat oven to 300. Grease a 9-inch tube pan; line with wax paper and grease again (or use generously greased and floured 10-inch fluted tub pan). Sift together flour and baking soda; set aside. In large bowl, combine remaining ingredients; blend in dry ingredients. Pour into prepared pan. Bake 1 hour and 45 to 50 minutes or until toothpick inserted near center comes out clean. Cool 15 minutes. Turn out of pan; remove wax paper. Glaze and garnish as desired.
