Eggplant With Tomatoes
Ingredients
2 thin slices eggplant
2 tsp. butter
1/4 C. canned tomatoes
1/2 tsp. chives, chopped
salt and pepper to taste
Cooking Instructions
Brown the eggplant in butter. Add salt and pepper. Heat tomatoes in a separate pan and pour over eggplant. Sprinkle with chopped chives.
