Easy Succotash
Ingredients
2 C. lima beans, fresh (about 1 lb.)
4 C. corn, fresh, cut from cob (about 8 ears)
3 Tbsp. butter, or margarine
1/2 C. whipping cream
1/2 tsp. salt
1/8 tsp. pepper
Cooking Instructions
Cook beans in boiling salted water about 15 minutes, or until almost tender; drain. Add corn, butter, whipping cream, salt, and pepper; mix well. Cook over low heat, stirring often, 7 to 10 minutes, or until corn is done.
