Easy Apple Dumplings
Ingredients
4 apples, pared, cored
3 Tbsp. granulated sugar
Dash cinnamon, optional
TOPPING:
2 Tbsp. granulated sugar
1/2 C. all-purpose flour
1/4 tsp. baking powder
1 egg, beaten
4 Tbsp. melted butter or margarine
2 Tbsp. chopped walnuts
1 Tbsp. grated orange rind
Cooking Instructions
Peel and core apples. Cut in half. Slice almost through but not all the way. Place apple halves in microsafe baking dishes or custard cups. Sprinkle with sugar and cinnamon, if used. Microwave apples at HIGH power for 1 1/2 minutes. Prepare batter. Spoon batter over apples when slightly cooled. Sprinkle with walnuts and orange rind. Microwave again at MEDIUM power for 2 minutes and at HIGH power for another minute. The batter will not get brown but will be cooked. Serve with a dollop of whipped cream or with ice cream or sherbet. REMEMBER: You may sprinkle topping with cinnamon for a better color when baking but orange rind and walnuts also add color to apple topping.
