Earth Roast
Ingredients
meat (sirloin tip roasts or briskets, trimmed)
seasonings to taste
BARBECUE SAUCE:
1 C. ketchup
1 C. apple butter
1 C. Catalina French Salad Dressing (Kraft)
Dash of hot sauce
1/4 tsp. garlic powder
Cooking Instructions
Dig a 4 foot deep pit large enough to hold the amount of meat you want to prepare. Then build a roaring fire using hardwoods. The fire will have to burn for 12 to 14 hours to produce the 2 food layer of coals necessary to cook the meat. Several days before the event, season meat with seasonings. Then wrap in 2 layers of cheesecloth. Wrap the bundles in burlap, tie with twine and chill until cooking time. Over the 2 foot layer of coals, apply a 1″ to 2″ layer of clean gravel and pack it down. Place the wrapped meat in the pit on top of the packed gravel. Cover the pit with clean plywood. You may first need to lay steel pipes across the top of the pit, to support the plywood. Then mount at least 2 feet of soil over the plywood cover to form an air tight seal. After cooking the meat for 7 1/2 to 8 hours, uncover the pit and remove meat packages. Unwrap the meat and it is ready to serve with the barbecue sauce.
NOTE: Do not make the mistake of using the same hole for another roast. It is the moisture in the ground that makes the meat so good.
