Dilled Meatballs Over Rice
Ingredients
1 lb. lean ground meat, or 1 lb. ground turkey
1/4 C. onion, diced
1/2 C. cold cooked rice
1/2 tsp. dried dill
1/4 tsp. salt pepper
10-3/4 oz. canned brown gravy
hot cooked rice
Cooking Instructions
In medium mixing bowl, combine all ingredients, except gravy and hot rice. Blend with hands and shape into 20 meatballs. Arrange meatballs in a 10-inch glass pie plate. Cover loosely with wax paper. Microwave 4 to 5 minutes, rearranging meatballs, and rotating plate halfway through. Drain off fat. Pour gravy over meatballs, replace wax paper cover, and microwave 2 to 3 minutes longer, until meatballs are done and gravy is heated through. Let stand, covered, 3 minutes before serving over hot cooked rice.
