Diet Potatoes
Ingredients
2 lg. baking potatoes
1 bullion cube dissolved in 1/4 C. boiling water
1 Tbsp. chopped scallions or fresh onion
1 tsp. fresh lemon juice
dash pepper
1/2 C. cottage cheese
1/4 tsp. salt
Cooking Instructions
Bake potatoes until done. Cut in half lengthwise. Scoop out potato from each half without breaking skin. Place potato in large mixing bowl. Add cottage cheese, dissolved bullion, scallions, lemon juice, salt and pepper; beat until smooth. Spoon into potato skins. Place on baking sheet and bake at 350ΒΊ for 10 to 15 minutes until potato is slightly browned. (about 90 calories/half).
