Sauteed Mushrooms
Ingredients
4 Tbsp. margarine
1/2 pound mushrooms, fresh
1/4 C. onions, sliced
salt to taste
freshly ground pepper
1/2 C. Italian parsley, chopped
2 Tbsp. lemon juice, or as desired
Cooking Instructions
Slice mushrooms, removing and discarding stems if shitakes. Heat margarine in medium to large frying pan. Add mushrooms to margarine. Saute over medium heat for 3 to 4 minutes, or until they begin to soften. Add onions, cooking until they become limp and begin to clear, about another 3 minutes. Add 2 Tbls. lemon juice, salt, and bit of ground pepper. Taste for seasonings. Add more additional lemon juice, if desired. Top with parsley. Serve immediately, or freeze for later use.
