Rice And Chicken Salad
Ingredients
1/2 C. uncooked wild rice
1/2 C. brown rice (or 1 C. for combination of wild and brown)
3 C. water
3/4 C. Italian salad dressing, reduced calorie
1 avocado, peeled, pitted, cubed
1 Tbsp. lemon juice
3 C. cooked chicken, cubed
2 tomatoes, chopped
1/4 tsp. ground black pepper
Cooking Instructions
Rinse wild rice. Cook wild rice and brown rice together in water, tightly covered, over medium heat for 30 to 35 minutes, until tender. Drain. Place in bowl and toss with dressing. Sprinkle avocado with lemon juice. Mix rice with avocado, chicken, tomatoes, and pepper. Refrigerate.
