Microwave Strawberry Raspberry Crisp
Ingredients
Topping:
6 Tbsp. margarine
6 Tbsp. unsweetened apple juice concentrate
1/2 tsp. vanilla extract
1/4 tsp. almond extract
1-3/4 C. unsweetened muesli or granola type cereal
Filling:
3 C. fresh strawberries, hulled
2 C. fresh raspberries
3 Tbsp. unsweetened apple juice concentrate
1 Tbsp. unsweetened muesli or granola type cereal
Cooking Instructions
Topping: In a 2-1/2 quart microwave safe casserole, cook margarine and apple juice concentrate on high (full power) for 2 minutes. Stir in extracts and cereal. Cook, uncovered, on high for 5 minutes, stirring and breaking up mixture after 3 minutes. Transfer to a bowl and set aside. In same casserole, toss fruit with remaining ingredients. Cook, uncovered, on high for 6 minutes. Stir. Sprinkle evenly with reserved topping. Cook on high for 3 minutes longer. Cool slightly. Serve spooned into small bowls.
