Chicken Taco Salad
Ingredients
2 packages (4-serving size) or 1 package (8-serving size) Jell-O Brand Lemon Flavor
Sugar Free Gelatin
2 C. boiling water
1-1/2 C. chicken breasts, cooked, diced boneless, skinless
1-1/2 C. corn, frozen, thawed
1 C. canned kidney beans, drained
1/2 C. chopped green pepper
1/4 C. salsa
1/4 C. (1 oz.) cheddar cheese, reduced fat, shredded
2 Tbsp. vinegar
1/2 tsp. chili powder
Cooking Instructions
Completely dissolve gelatin in boiling water. Refrigerate until slightly thickened. Stir in remaining ingredients. Spoon into four 10-oz. or 1-1/2 C. individual plastic containers or serving dishes. Refrigerate about 2 hours until firm.
