Diabetic Fruitcake
Ingredients
1/2 C. diced orange peel
1/2 C. diced lemon peel
1/2 C. diced dates
1/2 C. golden raisins
1/4 C. brandy or orange juice
2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 C. all-purpose flour
1/2 tsp. ground allspice
1/3 C. vegetable oil
2 Tbsp. brown sugar
2 eggs
1/2 C. chopped pecans
12 each pineapple chunks
Cooking Instructions
Combine first 5 ingredients in mixing bowl. Add the rest, except the pineapple. Mix well. Pour into baking cups, filling each 2/3 full. Top each with a pineapple chunk. Bake for 30-35 minutes at 325 degrees.
