Deer Zucchini Casserole
Ingredients
1 lb. Italian sausage
2 lbs. deer stew meat
2 med. onions (thick sliced)
1 lg. zucchini (1 to 1 1/2 lbs.)
3 ripe tomatoes (peeled, coarse chop)
2 Tbsp. dried parsley
1 lg. bay leaf
1 tsp. salt
1 tsp. pepper
1 C. red wine
Cooking Instructions
In a skillet fry Italian sausage until done. Remove sausage and place in a Dutch oven or large casserole. Brown deer cubes in the sausage grease, add to sausage. Fry onions until soft, add to meats. Cut stem and blossom end from zucchini, split lengthwise into quarters. Remove soft pulp and seeds, cut into 1 inch cubes. Fry zucchini (add a little vegetable oil to skillet if necessary), just until it starts to soften, add to meat. Add tomatoes (1 #303 can may be substituted for fresh). Stir in salt, pepper, parsley, bay leaf and red wine (or Rose’). Cover and bake in preheated 350 degree oven for 2 hours.
