Curried Rice Salad
Ingredients
1 1/2 C. mayonnaise
1/2 C. raw (turbinado) sugar
1 Tbsp. curry powder, or to taste
6 C. cold cooked long grain rice
1 1/2 C. celery, thinly sliced
1 C. dried currants
1 C. toasted sliced almonds
Cooking Instructions
Stir sugar and curry into mayonnaise. Let stand a few minutes so sugar begins to dissolve. Combine all remaining ingredients in a large bowl. Give the mayonnaise mixture a final stir before mixing it into the rice.
