Curried Cauliflower And Potatoes
Ingredients
1/4 C. onion flakes
1/4 C. water
3 Tbsp. butter or margarine
3/4 tsp. ground turmeric
2 whole cardamom seeds, cracked
3/4 tsp. cumin seeds
1 tsp. salt
1 large potato
1 medium head cauliflower
Cooking Instructions
Soften onion flakes in water. Melt butter or margarine in a saucepan. Add onion and Saute until transparent. Do not brown. Add spices. Peel potato and cut into 1/2″ cubes. Add to the onion mixture and cook for 1 minute. Cut cauliflower into cubes and add to the pan, stirring to mix well. Cover and Saute for 30 minutes or until vegetables are tender. Serve hot. Serves 6 to 8.
