Crustless Zucchini And Tofu Quiche
Ingredients
4 C. zucchini, fresh or frozen, shredded
1 C. onions, chopped
1 clove garlic, minced
1 C. egg substitute
1 Tbsp. sherry, or lemon juice
1 tsp. basil
1 tsp. thyme
1 tsp. oregano
1 tsp. ginger
1 C. (4 oz.) low fat cheddar cheese, shredded
1 C. parmesan cheese
1 C. tofu, crumbled
Italian breadcrumbs
Cooking Instructions
In a deep 9-inch pie plate or shallow casserole, microwave zucchini, onions, and garlic 7 minutes on high, stirring twice. Beat egg substitute; add wine and seasonings. Add to vegetables. Stir in cheeses and tofu. Sprinkle crumbs on top. Microwave 10 minutes on high, or until nearly set in center.
