Crustless Spinach Quiche
Ingredients
10-oz. package frozen spinach, chopped
8 oz. part skim mozzarella cheese, grated
4 eggs plus 2 egg whites, lightly beaten, or 1-1/2 C. egg substitute
4 tsp. grated onion
1/4 tsp. nutmeg
salt (optional)
pepper, to taste
nonstick vegetable cooking spray
Cooking Instructions
Preheat oven to 350 degrees F. Place spinach in colander to thaw; press out all moisture. Mix spinach with cheese, eggs, onion, nutmeg, salt, and pepper. Transfer to an 8-inch pie plate coated with vegetable spray. Bake 30 minutes, or until knife inserted in center comes out clean. Serve hot or cold.
