Chicken And Black Beans
Ingredients
3 boneless chicken breast halves to 4 cut into strips
1 can corn-15 oz. drained
1 can black beans-15 oz. rinsed, drained
1 Tbsp. ground cumin
1 tsp. chili powder
1 onion halved, sliced thin
1 green pepper cut in strips
1 can tomatoes-14 oz. chopped
1 can tomato paste 6 oz.
Cooking Instructions
Combine all ingredients in a crock pot, mix well. Cover and cook on low for 5 to 6 hours. Garnish with shredded cheese, if desired. Serve with warmed flour tortillas, or over rice.
