Creole Black Beans
Ingredients
1 pound smoked sausage to 2 pounds cut into 1 inch slices
3 cans black beans-15 oz. each drained
1 1/2 C. chopped onions
1 1/2 C. chopped green pepper
1 1/2 C. chopped celery
3 garlic cloves minced
2 tsp. leaf thyme
1 1/2 tsp. leaf oregano
1 1/2 tsp. freshly ground white pepper
1/4 tsp. freshly ground black pepper
1/4 tsp. cayenne pepper
1 chicken bouillon cube
5 bay leaves
1 can tomato sauce-8 oz.
1 C. water
Hot boiled rice
Cooking Instructions
Brown sausage in a skillet over medium heat. Drain fat and transfer to crock pot. Combine remaining ingredients in crock pot. Cover and cook on low 8 hours or on high 4 hours. Remove bay leaves. Serve over cooked rice.
