Creamy Fish Chowder
Ingredients
3 strips bacon
1 C. onion, sliced
1 clove garlic
1 C. celery, sliced
3 potatoes, diced (4 cups)
2 C. water
1 1/2 tsp. salt
1 1/2 tsp. thyme
1 bay leaf
1 lb. fish (cod, flounder)
2 C. cream
1/2 C. milk
Cooking Instructions
Cook bacon; set aside. Saute onions, celery and garlic in drippings for approximately 15 minutes. Add potatoes, 1 cup water and seasonings. Cook until tender. Add fish and 1 cup water. Add cream and milk. Heat but do not boil. Serve with crumbled bacon bits. Dill may be substituted for thyme.
